This wine has been made exclusively with Mazuelo grapes
from Señorío de Sarría’s
Vineyard N°8, a vineyard planted with goblet-pruned
vines over 50 years old. The grapes are harvested
manually when they reach just the right level of ripeness.
Grape selection is carried out at the vines.
WINEMAKING
Traditional fermentation for 15 days at controlled
temperature (26°C-28°C) with maceration after
fermentation. After the malolactic fermentation and
the subsequent decantings it is filled into the new
Nevers oak casks for 6-12 months, depending on the
estimation of our winemaker.
TASTING
The age of the vines provides an intense garnet- red
wine with aromas of autumn fruit,
stone and slate, underscored with notes of lemon leaves.
Joyful, vivid and spicy in the
mouth, with very pleasant, smooth tannins and well-integrated
oak. This is a different
wine, fresh, suited to warm weather. An ideal companion
to raw fish and light meat.
