The wine is made from Cabernet Sauvignon grapes from
our vineyards in Olite. The grapes are harvested at
the optimal stage of maturity of each plot. The vines
are arranged in spaliers looking southwards.
WINEMAKING
Traditional fermentation at a constant temperature
of 28°C. Malolactic fermentation and decantings
before it is filled into the new American oak casks
and left there for 3 -6 months, depending on our winemaker’s
criteria.
TASTING
Intense cherry-red colour with bluish reflections.
Aromas of red fruits and spices
against a slightly balsamic background. Dry on the
mouth with a powerful structure. Savoury transition
and intense length. Serve at 16°C-18°C. Ideal
for roasted lamb,
intense meats like ox and spicy dishes.
