This wine is made from Chardonnay grapes harvested
at Señorío de Sarría´s
Vineyard n°3, located some 50 metres from the
winery. The conditions of this vineyard are especially
favourable for growing these grapes, which result
in fresh and fruity wines.
WINEMAKING
After harvesting the grapes at their optimum stage
of ripeness, they are gently pressed and left to macerate
for 4-6 hours at low temperatures. The must is then
separated from the skins and decanted into fresh Nevers
oak casks, where it is left to ferment for 120 days
with the lees.
TASTING
Bright golden yellow colour. Toasty and fruity aroma,
mostly apple. Hints of flowers with a good structure
and a smoky finish. Serve at 8°-10°C. Ideal
for seafood, charcoal-grilled fish, poultry, foie
gras, appetizers and rice.
