The grape comes from Señorío de Sarría´s
vineyards in Olite. It is basically elaborated with
two grape varieties: Tempranillo and Cabernet Sauvignon.
WINEMAKING
Independent vinification by varieties at a controlled
temperature of 28°C. After the malolactic fermentation,
the wine is decanted and put in the cask. While the
wine is being aged for around one year in American
oak casks it is decanted twice. It is then bottled
and kept for several additional months in the winery
before it is finally commercialised.
TASTING
Intense and deep violet reddish colour. Toasted aroma
with wild blackberries.
Soft, balanced acidity and tannins. Long finish and
remembrances of ageing. Serve at 14°-16°C.
Ideal for roast and stewed meats, cold meats and casseroles.
