VITICULTURE
This wine is made from a blend of red grape varieties
(Tempranillo, Grenache, Merlot, Cabernet-Sauvignon,
Graciano and Mazuelo) which reflect the utmost essence
of the vineyards of Señorío de Sarría
located in Sotés. The vines range from 10 to
54 years of age. The vineyards are divided into lots
according to their condition and the grapes are harvested
at the optimal stage of maturity in each spot.
WINEMAKING
Traditional fermentation at a controlled temperature
of 26°C-28°C. After the malolactic fermentation
and the subsequent decantings, it is left in new Allier
oak casks for 3-6 months, depending on our winemaker´s
criteria.
TASTING
Stunning on the nose and on the mouth, exceptional
personality. Medium-high bigarreau cherry-red colour.
Intense aroma of red and black fruits and hints of
violet and Allier wood. Complex wine with good balance
between sweet tannins and acidity. Serve at 16°C.
Ideal for white meats, lamb, cod stew, pasta and rice.
